STAFF AND SERVICE

With a 1 to 1.5 staff-to-guest ratio, your every wish is our command - frequently your every thought! The members of our hotel staff have been hand-picked from some of the world's finest hotels to ensure the highest level of service. They're not only extremely adept at what they do, but they honestly enjoy doing it. "Service with a smile" is very much in evidence from the bartenders to the restaurant managers to the room service attendant who wishes you a cheerful good morning as he sets out your breakfast on the balcony. Yet surprisingly, no gratuities are expected - they're included in your fare.

For the ultimate perquisite, book a Category B suite or higher and you'll have a butler, too. Want to arrange for a private car in Monte Carlo? Have your packages retrieved in Rome? Invite friends for a private cocktail party in your suite? No sooner said than accomplished graciously, and, of course, with a smile.

DINING

In planning the dining experiences of the Seven Seas Voyager, Regent Seven Seas Cruises wanted to ensure that our guests would have a choice of dining venues. Most ships of this size would offer two, maybe three restaurants. We wanted four and we have four; each one unique featuring its own menu, ambiance and decor. Even more importantly, single open-seating dining is offered in each restaurant. You decide when, where and with whom you wish to dine. A table for two? Dinner with new-found friends? The choice is yours!

Let's begin with the Compass Rose. Our largest restaurant is absolutely exquisite - spacious and un-crowded, with tables arranged so that most guests have a picture window view. And thanks to the handsome wood and etched glass partitions, you'll feel like you're dining in a much more intimate room. Menus feature continental specialties, as well as vegetarian and spa cuisine.

If you favor French specialties, you will be delighted to learn that Signatures features the cuisine of Le Cordon Bleu, undoubtedly the most famous culinary school in the world.

The atmosphere is classically, elegantly French, of course, with white table linens, burgundy chairs and the soft glow of candles. Along with traditional French items such as escargots or canard a l'orange and the like, there's also a Menu du Monde with selections from around the world, all prepared using Le Cordon Bleu methods. And presentation? The eyes feast, too. From a simple garden salad to an elaborate coq-au-vin, every dish is undertaken seriously, freshly prepared and served flawlessly.

Latitudes is our most intimate and perhaps most unique dining venue. Menus have been artistically developed to celebrate the modern American Palate. From the Northwest Coast to California, Texas, Illinois, Florida, New York and even Hawaii, this intimate dining venue brings together the best of American cuisine and wines paired with carefully selected music for a memorable dining experience. One evening it could be Florida specialties such as curried lobster with plantains and key lime pie, while the next night might feature a Sonoma or Napa Valley menu with entrees such as a pan-seared Pacific halibut or duck breast with chestnut-sage sauce.

Do you have a favorite restaurant where the maitre'd greet you like an old friend and the chef comes out to say hello? This kind of warm camaraderie is typical of La Veranda. It's festive and full of the bonhomie you might find in a small trattoria or French brasserie. And the food is exciting, too - an enticing mix of Mediterranean cuisine with a North African influence. Stuffed aubergines, for example, or Lam Tagine with dried figs and almonds. Tableside flambes are also quite popular.

In all four restaurants, you'll enjoy a choice of superior wines poured nightly with our compliments. Of course, if you prefer something particular, your sommelier will be pleased to discuss alternatives from the Voyager's quite extensive wine cellar.
